The introduction of Pinot Nero in the 19th century marked a turning point. This noble grape variety, originally from Burgundy, found its ideal home in the mineral-rich moraine hills of the Oltrepò Pavese. Here, it flourishes with finesse and aromatic precision, forming the very heart of Oltrenero’s creations – especially in the production of sparkling wines using the Metodo Classico.
This traditional method of bottle fermentation, also known as the Champenoise technique, imparts Oltrenero wines with their signature depth, elegance and fine, persistent mousse. The process begins with the presa di spuma – the second fermentation in bottle – followed by an extended period of ageing on the lees, which may last up to five years. Through meticulous remuage and dégorgement, a sparkling wine emerges that harmoniously expresses freshness, minerality and complexity – a true reflection of its terroir.
Since 1987, Oltrenero has been part of the esteemed Zonin family, one of Italy’s leading wine producers.
