Grape: Corvina, Rondinella, Molinara, Oseleta, Corvinone and Croatina.
Production area: Own vineyards in Valpantena between Poiano and Quinto near Figaretto. The vineyards are located on a hilly area with south exposure. Soils are clayey and strongly calcareous. Gujot training system with 4000 vines per hectare.
Wine making: Harvest by hand in wooden cases in the third September decade. Mashed grapes fall in small 50 hl inox steel tanks. During fermentation daily pumping over and delestage. Controlled temperature of 28°C.
Maturation: The top of refining is reached one year after the harvest.
Color: Dark ruby red with violet reflections.
Sensory characteristics: Cherry, plum, blackberry and intense violet nose, which is a typical characteristics of Valpantena production.
The taste is dry and persistent.
Alcohol content: 13 % Vol.
Residual sugar: 2,8 g/l
Acidity: 5,9 g/l
Stopper: Natural cork
How to serve: Ideal with rich appetizers, pasta, red meats and fresh- or middle-mature cheese.
Recommended serving temperature: Between 16 and 18°C.

The CORVINA is red variety native of the valley of Verona. They can be found in the present almost exclusively in this area. Unmixed expanded it is not very successful, because it is not balanced enough.

The OSELETA is an ancient, native species of red grape from the Valpolicella in Veneto. She was almost extinct after a phylloxera disaster, but was cultivated slowly with time. The variety is now used mainly for the assemblage of Valpolicella and Amarone.
