Grillo, a natural cross between Catarratto and another native variety, has long proven its affinity with the Sicilian climate. Once primarily used in Marsala production, it now enjoys a renaissance as the foundation for fresh, characterful white wines. The golden-hued grapes are harvested at peak ripeness, gently pressed, and fermented at controlled temperatures in stainless steel tanks. A period of maturation on fine lees, followed by bottle refinement, lends the wine additional structure and complexity.
In the glass, Diamanti reveals a luminous straw yellow with delicate greenish highlights. The bouquet is clear and layered, led by vibrant citrus and ripe pineapple, subtly lifted by a hint of menthol that imparts a cool, almost ethereal dimension. - Origin: Sicilia DOC. From the municipality of Butera south of the city of Caltanissetta in the south of the island of Sicily on soils that are predominantly of volcanic origin.
- Winemaking and aging: After a gentle pressing of the grapes harvested at perfect ripeness, the must ferments in stainless steel tanks at a controlled temperature (16-18°C) and is kept on the lees for a period of 4 to 6 months, followed by a refinement of a few months in the bottle.
- Scent: It displays remarkable freshness and reveals pronounced aromas of citrus fruits and pineapple. A subtle hint of menthol complements the bouquet, lending the wine a cool, almost ethereal quality.

The Grillo grape, an indigenous white variety, originates from the picturesque island of Sicily, particularly from the Trapani region in the island’s west. It is believed to have emerged as a natural cross between the white Catarratto grape and another local variety, likely in the late 19th or early 20th century. From the start, the Grillo vine thrived especially well under the hot, dry conditions of western Sicily. Its remarkable adaptability to this climate quickly made it a favourite among local winemakers, who prized it for producing quality wines. Initially, Grillo was used primarily in the production of Sicily’s famous fortified Marsala wine. However, in recent decades, there has been a rising interest in single-varietal Grillo wines, leading winemakers to use this grape to craft exceptional stand-alone wines. Grillo vine leaves are medium-sized with a slightly oval shape. Their dark green colour gives them a glossy texture, and they are typically five-lobed with sharply serrated edges. The grapes are large and cone-shaped, hanging in loosely clustered bunches on the vine and displaying a graceful golden-yellow hue with a compact structure. The berries are medium-sized, round to slightly oval, with thin skins and juicy flesh that ripens from a greenish tint to a rich golden-yellow or amber. The Grillo vine exhibits medium to high vigour, with a tendency to branch well. It flourishes in a variety of soil and climate conditions but performs best in warm, dry climates.
