The “Exclusive” Prosecco Spumante Brut DOC Balbinot is a sparkling wine that captures the soul of Veneto’s storied Prosecco region. Its origins lie in the gentle hills of the Colli Trevigiani, nestled between Conegliano and Valdobbiadene - a landscape long regarded as the embodiment of Italian joie de vivre. For generations, the Balbinot family has cultivated these vineyards, producing Prosecco exclusively from their own grapes - a proud testament to authenticity and artisanal dedication.
At its heart is the Glera grape, once celebrated in antiquity as vinum Pucinum. Thriving in well-ventilated mid-slope sites with optimal sun exposure, it reveals its full potential. The soils - a mix of moraine-rich limestone, clay and sand – offer excellent drainage, enhance the wine’s mineral character and lend structure and poise.
Vinification is carried out with meticulous care. Following selective hand-harvesting, the grapes are gently pressed and fermented at low temperatures to preserve their primary aromas. The second fermentation takes place in pressurised tanks using the Charmat method, resulting in a particularly fine and consistent mousse. A brief period on the lees refines the profile before the wine is bottled under controlled conditions and matured further in glass.
In the glass, the “Exclusive” Prosecco reveals a straw-yellow hue with greenish highlights and a lively, persistent perlage. The bouquet is delicate and inviting, with notes of green apple, ripe pear and white blossom, lifted by fresh citrus and a subtle touch of brioche.
