Description

Grillo Conchiglia DOC 2021 / Cantina Trovati / Sicily

White wine from Italy

Outside of Trentino, Mezzacorona owns the Trovati winery in Sicily. The wines produced here are sometimes labelled under the brand names Feudo Arancio or Stemmari, depending on the country in which they are sold. The Trovati winery has a total of seven hundred hectares of vineyards in southern Sicily, on wineries in Sambuca di Sicilia in the province of Agrigento and in Acate in the province of Ragusa. Autochthonous and international grape varieties are grown here, which are cultivated and controlled with the experience and knowledge of agronomists. Here tradition meets modern technology because the winery has modern winery equipment. The rest is done by the sun and the wind, which give the grapes their taste.

The white grape variety Grillo comes from Italy and is now mainly grown in Sicily. It is said to come from the Apulia region and only came to Sicily after a phylloxera disaster in the 19th century, where it was first used in the famous Marsala dessert wine. Grillo makes pale yellow wines that are rich in alcohol and extract. It also has a slight tannin content. The autochthonous Grillo is one of the most widely grown white grape varieties in Sicily. The grape harvest is subject to extremely scrutiny. Fermentation takes place at a controlled temperature (18°C) for 10 days.

The grapes for the Trovati Grillo are picked in the second week of September and gently pressed in the wine cellar using the so-called reduction process with the exclusion of air. After natural decanting, the must ferments at a controlled temperature of around 18°C for ten days in stainless steel containers. The vinification comes to an end after another five months, in which the white wine has rested on fine lees.

With its intense straw yellow, this Grillo exudes a distinctly tropical bouquet with notes of mango and papaya that merge with a hint of jasmine and white flowers. The taste of the monovarietal autochthonous Grillo is fruity, balanced, and harmonious. With its light, elegant acidity, it conjures up a fresh aroma on the palate. The finale is medium in length and melty.

At a recommended chilled drinking temperature of 10 to 12°C, this aromatic Sicilian white wine goes well with light Mediterranean starters, seafood, pasta dishes with vegetable sauces, white meat, and fried fish. All in all, a gorgeous wine for every day.
