The Grillo Conchiglia DOC 2024 from Cantina Trovati is a characterful Sicilian white wine that marries the Mediterranean soul of its native grape with technical precision and sensory depth. Part of the Mezzacorona group, the Trovati estate is located in the southern reaches of the island, with vineyards in Sambuca di Sicilia (Province of Agrigento) and Acate (Province of Ragusa). Here, the indigenous Grillo variety thrives on sandy, gently undulating soils under intense sunlight – ideal conditions for aromatic concentration and optimal ripeness. Cultivation follows the espalier training system, with approximately 4,500 vines per 2.5 hectares.

Harvest begins in the second week of September. After destemming, the grapes are gently pressed in a reductive environment to preserve freshness and primary aromas. Following natural clarification, fermentation takes place over ten days at a controlled temperature of 18°C in stainless steel tanks. The young wine is then matured for five months on fine lees – a process that lends it structure, elegance and depth.

In the glass, the Grillo reveals a vibrant straw yellow hue with greenish highlights. The bouquet is layered and expressive, combining fresh notes of nettle, green pepper and jasmine with fruity accents of citrus, apple, passion fruit, mango and papaya. These tropical aromas blend seamlessly with floral nuances to create a fragrant and refined aromatic profile.

On the palate, the wine is fruit-forward, balanced and harmonious. A lively, well-integrated acidity brings freshness, while a subtle minerality adds structure. The Grillo grape, an indigenous white grape variety, originates from the picturesque island of Sicily, particularly the Trapani region in the western part of the island. It is believed to have arisen as a natural cross between the white Catarratto grape and another indigenous variety, likely in the late 19th or early 20th century. From the outset, the Grillo vine flourished primarily in the hot and dry conditions of western Sicily. Its remarkable adaptability to this climate quickly made it the preferred choice among the region's winemakers, who valued it for the production of high-quality wines. Originally, Grillo was mainly used for the production of the famous Marsala wine, a fortified wine from Sicily. However, in recent decades, there has been an increased interest in pure Grillo wines, leading winemakers to begin using this grape for outstanding single-varietal wines. The leaves of the Grillo vine are medium-sized and possess a slightly oval shape. Their dark green colour often lends them a glossy texture, and they typically have five lobes with sharply toothed edges. The grapes are large and cone-shaped, hanging in loosely clustered bunches on the vines and presenting themselves in a graceful golden-yellow colour with a compact structure. The berries are medium-sized, round to slightly oval, with thin skins and juicy flesh that changes from greenish to golden-yellow or amber during ripening.
