What began with 48 founding fathers has evolved over the years into a community of 200 consortium members. These members maintain close contact with Cantina's agronomist, tending to their vineyards with utmost care. The result is a supply of top-quality grapes forming the basis for premium wines. Operated like a family business, Cantina Settecani maximizes its potential, always placing quality and tradition at the forefront of its efforts. The grapes for Cantina Settecani's Lambrusco Grasparossa Amabile DOP thrive on the gentle hills of the cultivation zones Castelvetro, Castelnuovo Rangone, and Spilamberto. The vines are arranged using the Guyot system, with the grapevines cut into a single, long main stem (shank) with a short fruitwood arm. This pruning method allows targeted fruit development and facilitates vine care. The choice of grapes directly influences the taste and style of Lambrusco. They are carefully selected and harvested from late September. After pressing, fermentation occurs by adding yeast to the grape juice in stainless steel tanks to promote the release of carbon dioxide and make the wine slightly sparkling. Temperature control during fermentation is crucial to achieve the desired organoleptic properties. This control remains important after fermentation to ensure stable foam formation. Cool temperatures support the stability of the foam in the wine. After fermentation and foam preparation, Lambrusco is bottled and sealed.
