Grappa is distilled from the fermented pomace left over from winemaking, known as "trester." This use of pomace is particularly sustainable, as it allows to produce not only wine but also a wonderful spirit from the same grapes. For a long time, grappa was considered a drink for poor farmers. However, through technical improvements in the distillation process during the 20th century, grappa has gradually become one of the most respected spirits worldwide, appreciated by gourmets.
Situated between the Piedmontese cities of Asti and Alessandria, in the picturesque village of Altavilla Monferrato, lies the historic distillery Mazzetti d'Altavilla. Founded in 1846 by Filippo Mazzetti, the distillery has been continuously run by the founding family for over 170 years. The distillery produces exquisite grappa, brandy, and liqueurs, using pomace that mainly comes from Piedmontese wines, providing an excellent foundation for their distinguished products. The 3.0 Barricata - Grappa Invecchiata from Mazzetti d’Altavilla is an exquisite grappa, made from selected, fresh, and still moist pomace of the finest Piedmontese grapes. The distillation and refinement of the grappa are carried out using a discontinuous process, where copper stills are indirectly heated by steam. After distillation, the grappa rests for three months in stainless steel tanks before aging for a further twelve months in chestnut and oak barrels. This careful aging process imparts the 3.0 Barricata with unparalleled depth and complexity. Its rich and multi-layered aroma delights both connoisseurs and newcomers, making this grappa a true masterpiece of the distiller's art.
