The Pecorino Abruzzo DOC 2024 from Fosso Corno is a characterful white wine hailing from the picturesque hills of Abruzzo, a region renowned for its exceptional viticultural conditions. The Fosso Corno estate spans thirty hectares near Roseto degli Abruzzi in the province of Teramo, nestled between the coastal cities of Ancona and Pescara. From the vineyards, one enjoys sweeping views of the Adriatic Sea to the east, while the majestic Gran Sasso massif rises dramatically to the west.

Since its acquisition by the Biscardo family in 2001, Fosso Corno has been devoted to crafting wines of the highest quality, with a particular focus on sustainable vine cultivation and innovative agronomic practices.

The Pecorino grape, a historic white variety native to central Italy, takes its name from the Italian word pecora – sheep. Traditionally, the grapes ripened during the transhumance, the seasonal migration of shepherds and their flocks, with the sweet fruit attracting the animals as they passed through the vineyards. Due to its modest yields, the variety fell into obscurity for many years before being rediscovered and reintroduced to Abruzzo in the 1980s. The vine produces open canopies and compact, golden-yellow clusters rich in sugar and acidity – ideal for crafting fresh, aromatic white wines.

The grapes for Fosso Corno’s Pecorino are sourced from well-ventilated vineyard plots and harvested carefully by hand. To preserve their freshness, they are swiftly transported to the winery immediately after picking. There, they undergo gentle pressing to avoid the extraction of bitter compounds. The resulting must is fermented in stainless steel tanks at controlled temperatures between 15 and 18 °C, allowing the grape’s fruity and floral aromas to shine. The wine then continues to mature in stainless steel, enabling natural clarification and stabilisation.

In the glass, the Pecorino reveals a brilliant straw-yellow hue with golden highlights. Its bouquet is delicately perfumed with white blossoms, ripe citrus fruits and green apple, complemented by herbal nuances of sage and mint that lend freshness and depth. On the palate, it unfolds with ripe fruit notes, vibrant acidity and a well-balanced structure. Mineral undertones enhance its lively character, while the long, fruit-driven finish lingers with elegant freshness.

Served at a temperature between 10 and 12 °C, this Pecorino reaches its full potential. It pairs beautifully with refined starters, light pasta dishes featuring vegetables or seafood, grilled fish and white meats such as chicken or turkey. Fresh herb salads or citrus-dressed greens, as well as mild cheeses like young Pecorino, Ricotta or goat’s cheese, make excellent companions. Thanks to its crisp elegance, it also serves splendidly as an aperitif, offering a stylish prelude to moments of indulgence.

PECORINO

Pecorino is a white grape variety primarily cultivated in Abruzzo, as well as in Marche and Umbria. Its name likely derives from the Italian word "pecora" (sheep), as sheep are particularly fond of eating the grapes. It is believed that Pecorino is a very old variety, possibly grown in central Italy since ancient times. However, the lack of written records from that era leaves its exact origins unclear. What is certain is that this grape variety has been cultivated in central Italy for many centuries. In the past, wines made from Pecorino were often consumed locally and were little known outside these regions. During the 20th century, the cultivation of Pecorino declined significantly due to the grape's low yields, which posed economic challenges for vintners. In the 1980s, the Pecorino grape was rediscovered in Marche by some dedicated winemakers. Recognising its potential for quality, they began replanting and carefully tending to Pecorino vines. From Marche, the variety gradually spread to neighbouring Abruzzo, where vintners adapted cultivation methods to local conditions. They utilised the high altitudes and unique soil composition of the region to produce high-quality Pecorino wines. Modern viticultural practices and meticulous vinification have continuously improved the quality of Pecorino wines, leading to growing recognition of the variety both in Italy and internationally. The climate in Abruzzo combines continental and maritime influences. Summers are warm, and winters can be cold, with proximity to the Adriatic Sea providing some moderation. These conditions favour the ripening of Pecorino grapes, promoting a good balance between acidity and sugar. The Pecorino vine has a vigorous growth habit with long, strong shoots. It tends to form an open and airy leaf canopy, which enhances ventilation and sunlight exposure for the grapes, reducing the risk of fungal diseases. The leaves of the Pecorino vine are medium-sized, five-lobed, and exhibit a distinctive deep green colour. The leaf surface is rough and slightly hairy, with serrated edges and pronounced veining. The clusters are compact and dense, often conical to cylindrical in shape. They can reach medium to large sizes and frequently have a characteristic winged form. The berries are relatively small, oval, and encased in a thick, golden-yellow skin that can take on a slight rusty hue when fully ripe. The berries have a high concentration of sugar and acidity, contributing to the wine's intense aromas and good structure. The yields of Pecorino vines are generally low to medium, which enhances the concentration of flavours and the quality of the wines. These low yields were one reason for the variety's past lack of popularity but are also key to its current recognition as a high-quality grape variety.
