The Fosso Corno winery spans thirty hectares on a picturesque hill near the village of Roseto degli Abruzzi, situated in the central Italian province of Teramo, between the port cities of Ancona and Pescara. From the vineyard, there are breathtaking views of the beautiful Adriatic Sea to the east, while to the west, the imposing Gran Sasso massif rises majestically from the rolling landscape. This region, renowned for its wines, boasts a unique natural setting ideally suited to viticulture. The growing interest in Montepulciano wine in the 1990s prompted the Biscardo family to acquire the Fosso Corno estate in 2001. Since then, the family has dedicated itself to producing wine of the highest quality, which requires great effort in vineyard maintenance and the careful application of agronomic experiments.
Pecorino is an ancient white grape variety native to Abruzzo, Marche, and Umbria. Its name derives from the Italian word "pecora" (sheep). The grapes of this variety ripen during the transhumance, the seasonal migration of herds with their shepherds. The sheep were attracted to the sweet grapes found in the vineyards along their route. Due to low yields, its cultivation declined in the 20th century. In the 1980s, it was rediscovered in Marche and spread to Abruzzo. The climate there promotes a good balance between acidity and sugar in the grapes. The Pecorino vine forms open canopies and produces compact, golden-yellow clusters with high sugar and acid concentrations, resulting in high-quality wines.
The grapes for the Pecorino Abruzzo Riserva DOC come from the ideally located and well-ventilated Fosso Corno estate. After manual harvesting, the grapes are quickly transported to the winery to preserve their freshness. There, they are gently pressed to separate the juice from the skins, with this "gentle pressing" minimizing the extraction of bitter compounds. The resulting must is fermented in stainless steel tanks at controlled temperatures, preserving the fruity and floral aromas of the Pecorino grape. Fermentation often occurs at low temperatures (around 15-18°C) to maintain the wine's freshness and aromatic profile. After fermentation, the wine is aged for a period in stainless steel tanks, allowing for natural clarification and stabilization.
This Pecorino from Abruzzo shines in the glass with a bright straw-yellow colour. Its bouquet entices with fruity and floral aromas, underpinned by pleasant and persistent mineral notes. On the palate, the wine unfolds fresh and fruity, with a remarkable structure and delicious nuances of green apple and citrus fruits. The finish is long-lasting and elegant, marked by enduring freshness and a fine minerality that make this wine an unforgettable pleasure.
At an ideal serving temperature of about 16 to 18 degrees Celsius, the Pecorino Abruzzo DOC from Fosso Corno reveals its full potential. It also complements light pasta dishes wonderfully, especially those with seafood or vegetables, such as spaghetti alle vongole or penne with zucchini and lemon sauce. Pecorino is a white grape variety primarily cultivated in Abruzzo, as well as in Marche and Umbria. Its name likely derives from the Italian word "pecora" (sheep), as sheep are particularly fond of eating the grapes. It is believed that Pecorino is a very old variety, possibly grown in central Italy since ancient times. However, the lack of written records from that era leaves its exact origins unclear. What is certain is that this grape variety has been cultivated in central Italy for many centuries. In the past, wines made from Pecorino were often consumed locally and were little known outside these regions. During the 20th century, the cultivation of Pecorino declined significantly due to the grape's low yields, which posed economic challenges for vintners. In the 1980s, the Pecorino grape was rediscovered in Marche by some dedicated winemakers. Recognising its potential for quality, they began replanting and carefully tending to Pecorino vines. From Marche, the variety gradually spread to neighbouring Abruzzo, where vintners adapted cultivation methods to local conditions. They utilised the high altitudes and unique soil composition of the region to produce high-quality Pecorino wines. Modern viticultural practices and meticulous vinification have continuously improved the quality of Pecorino wines, leading to growing recognition of the variety both in Italy and internationally. The climate in Abruzzo combines continental and maritime influences. Summers are warm, and winters can be cold, with proximity to the Adriatic Sea providing some moderation. These conditions favour the ripening of Pecorino grapes, promoting a good balance between acidity and sugar. The Pecorino vine has a vigorous growth habit with long, strong shoots. It tends to form an open and airy leaf canopy, which enhances ventilation and sunlight exposure for the grapes, reducing the risk of fungal diseases. The leaves of the Pecorino vine are medium-sized, five-lobed, and exhibit a distinctive deep green colour. The leaf surface is rough and slightly hairy, with serrated edges and pronounced veining. The clusters are compact and dense, often conical to cylindrical in shape. They can reach medium to large sizes and frequently have a characteristic winged form. The berries are relatively small, oval, and encased in a thick, golden-yellow skin that can take on a slight rusty hue when fully ripe. The berries have a high concentration of sugar and acidity, contributing to the wine's intense aromas and good structure. The yields of Pecorino vines are generally low to medium, which enhances the concentration of flavours and the quality of the wines.
