Exposure and altitude: Hilly-area, 350 metres above sea level, south-east exposure.
Soil type: Clayey and calcareous marl.
Vine training system: Espalier (Guyot).
Grape yield per hectare: 6-8 tons/hectare, 1,2Kgs per vine.
Vineyard density: 4500 vines per hectare.
Harvest time: First ten days of October, manual harvest.
Vinification: The clusters are harvested when they are perfectly ripe, destemming and crushing fermentation with maceration with the skins for 30 days. Malo-lactic fermentation and ageing in new oak barriques.
Sensory characteristics: Fruity aroma. Concentrated in the mouth with a fresh flavour of fruit and oriental spices.
Color: Intense red.
Alcohol content: 13 % Vol.
How to serve: Goes well with veal, stews, game and aged cheeses. Even solo, he makes an excellent figure.
Recommended serving temperature: Between 16 and 18°C.

PIEDIROSSO (red feet) is a red grape that is grown mainly in southern Italy. It was already cultivated by the Romans. Pliny the Elder mentions in his writings a "columbina purpurea", which is probably already the grape Piedirosso.
