In 1927, Pasquale Mottura decided to further develop his vast vineyards and established one of the most significant wineries in Salento. Almost 100 years later, and after four generations of dedication, Mottura is now a leader in Apulia and renowned worldwide for its high-quality wines. Cantina Mottura is located in Tuglie, a small town in southern Salento. The original premises, a beautiful baroque structure from the late 19th century, still serve as the site for wine ageing in oak barrels. Success came swiftly: by the 1940s, Mottura’s wines were being transported in large barrels to northern Italy, where they were highly esteemed. In the 1960s, Mottura was among the first wineries to bottle their wines, always with the aim of offering high quality in large quantities. Today, four generations later, Mottura continues to face new challenges to offer innovative and competitively high-quality products while preserving and reviving the Italian tradition.
The Primitivo di Manduria is a marvellous red wine from the picturesque region of Apulia in the sunny south of Italy. This noble drop is cultivated in the province of Taranto on the idyllic southern coast of the Salento peninsula, the heel of Italy’s boot. Its name derives from the charming small town of Manduria, located southeast of the historic city of Taranto. The Mottura wine line, from which this exquisite wine originates, is known for modern wines that nevertheless boast a long and rich history. These indigenous wines capture the true spirit and authentic soul of their homeland with their diverse aromas and enchanting scents, promising an unparalleled tasting experience.
This exceptional Primitivo thrives splendidly on the calcareous and clay-rich soils of the picturesque province of Taranto in sunny Apulia. The vines are artfully trained using the spur cordon or Guyot system, providing optimal growing conditions. The grapes reach their perfect ripeness in the first week of September and are then carefully harvested by hand. This is followed by gentle pressing and destemming of the grapes. The traditional maceration period lasts four to six days, imparting intense aromas to the wine. The must then ferments under constant pumping over and delestage in modern stainless-steel tanks at a controlled temperature of 20 degrees Celsius, to fully develop the essence of the grapes.
The Primitivo di Manduria DOC from Mottura impresses with its intense red colour and a distinctly strong personality. Its bouquet unfolds splendid aromas of ripe red fruits, fragrant herbs, and autumnal undergrowth. Served at an optimal drinking temperature of around 18 degrees Celsius, this Primitivo reveals a dry, opulent taste, remarkable for its harmony and long-lasting finish. The subtle acidity is perfectly integrated, while the velvety tannins discreetly remain in the background, ensuring a thoroughly pleasant tasting experience.
This impressive wine pairs particularly well with pasta dishes in robust sauces like Ragù or Arrabbiata, and with pizza topped with hearty ingredients. However, the Primitivo’s true strengths are shown in the company of grilled meats: whether juicy beef, tender lamb, savoury pork, or aromatic game, this Primitivo enhances the flavours wonderfully. Hard cheese lovers will also be delighted—Pecorino, Parmesan, and aged Gouda fully reveal their flavours when paired with this red wine. But that's not all. The Mottura Primitivo also expertly complements spicy dishes like Mexican or Asian delicacies. The Primitivo is a red grape variety predominantly thriving in the region of Apulia in Southern Italy. Its exact origin is not definitively clarified, though it is speculated to have originated from Dalmatia and reached Apulia in the 18th century. Flourishing particularly well in the vicinity of the town of Manduria, it led to its nomenclature "Primitivo di Manduria". For a long time, the Primitivo grape remained predominantly known regionally, only gaining international attention in recent decades, partly due to the growing popularity of its wines on the global market. Already in 1974, Primitivo di Manduria received the DOC classification, ensuring the quality and geographical origin of wines from this region. The Primitivo grape belongs to the Vitis vinifera family and is characterized by dark berries. The leaves of the Primitivo plant are large, dark green, and hand-shaped, providing ample surface area for photosynthesis and grape ripening. The grapes are medium-sized, equipped with thin skins, and tend to grow densely, requiring good ventilation to avoid fungal infestation. The berries themselves are dark blue and have a high sugar content. The vines prefer warm, sunny climates and thrive particularly well in the dry, limestone-rich soils of the Apulia region. Often, the vines are attached to wire systems to support growth and protect grapes from soil moisture. In recent years, winemakers in Apulia have increasingly invested in modern cultivation methods and cellar techniques to further enhance the quality of their wines.
