Ca’ Bolani is a magnificent winery, distinguished by an impressive avenue of 999 cypress trees, celebrating and preserving extraordinary biodiversity. Nestled in the picturesque region of Aquileia, south of Udine in the far northeast of Italy, the estate is embraced by the majestic Alps and the Adriatic Sea. Known as a wine-growing area since Roman times, this region offers Ca’ Bolani ideal conditions for producing exquisite wines. Thanks to the mild sea breezes in summer, the protective mountains, pronounced temperature fluctuations, and a variety of soils - from clay and gravel substrates to sandy coastal soils - wines of outstanding character can flourish here. Ca’ Bolani preserves a valuable winemaking heritage, reflected in a "garden of vineyards." This special environment allows to produce wines with remarkable fragrance and aromatic richness.

The Ribolla Gialla, a white grape variety, is primarily native to Friuli and Slovenia. Its history dates back to Roman times and reached its first peak in the Middle Ages and Renaissance. In the 20th century, modernized cultivation methods led to higher wine quality. Today, Ribolla Gialla is an essential component of the renowned Friuli-Venezia Giulia wine region. The vines are robust, the grapes medium-sized with a yellowish hue and a distinctive taste. It prefers calcareous soils and a climate with warm days and cool nights. Although less widespread, the variety is gaining popularity among winemakers and wine enthusiasts.

The grapes for this exceptional white wine are typically harvested from the end of September to early October. The exact harvest time depends on the climatic conditions of the respective year. To achieve the ideal ripeness, particular attention is paid to the sugar content and acidity. The grapes are harvested at the perfect moment to preserve the freshness and characteristic aromas of the wine. A gentle pressing occurs using a press that utilizes Vacuum System technology. Subsequently, the must is cold clarified using flotation technology and then fermented in stainless steel tanks at a controlled temperature of 18 degrees Celsius with selected yeasts over a period of 8 to 10 days. The aging and resting on the fine lees take place in stainless steel tanks over a period of 3 to 4 months, depending on the characteristics of the vintage. During this time, the fine lees are stirred weekly using the battonage technique.
