Zìnzula, the jewel of Masseria Altemura, was born between the two seas of Apulia, celebrating the splendour of the coast by paying homage to the most beautiful cave of Salento: the Zìnzulusa. A rosé made from Negroamaro grapes, it seduces with the finesse of its aromas and the brilliance of its slender and supple body, radiant in the light. The essential beauty of Zìnzula springs from exquisite details and the purity of the crystal-clear waters of the Mediterranean.

Masseria Altemura nestles in the heart of Salento, halfway between the Ionian and Adriatic Seas. It boasts a unique terroir, attributed to the exceptional light, the fresh, ever-blowing breezes from both seas, and the land primarily composed of white limestone rocks and the red soil of Salento. The estate resides within the Primitivo di Manduria DOC appellation, amidst the landscape of Torre Santa Susanna. It comprises a 17th-century farmhouse (Masseria), a winery designed according to the principles of green architecture, and the wonderful vineyards that envelop it.

Negroamaro is a red grape variety primarily cultivated in the southern Italian region of Apulia, yielding robust wines. Yields are typically very low, which contributes to the quality of the wines. It is believed to have been introduced to Southern Italy by Greek settlers in antiquity, although further details remain elusive. The name itself is somewhat perplexing, as in translation, Negroamaro actually means Black (Latin: niger) - (Greek: mavros) Black.

The vineyards dedicated to Zìnzula are composed of a layer of fine red soil on a limestone bed. To produce a high-quality rosé, Negroamaro is cultivated in this case, employing the same agronomic techniques used in the production of the finest white wines: robust, luxuriant canopies that effectively shield the grapes from over ripeness and sunburn, avoid oxidative effects, as well as prevent high alcohol levels and excess tannins. To produce fully developed, crisp grapes by harvest time, it is crucial that the vines receive the right amount of water during the critical ripening phase. This meticulous vineyard management forms the basis for a rosé with pronounced acidity, freshness, and aromatic finesse.

The Negroamaro used for Zìnzula is harvested in mid-September, at the first rays of morning light. The so-called "tears" or static "tear formation" of the must is preserved in the press under the grapes' own weight, without any maceration. This technique allows for the extraction of a delicate pinkish hue and preserves the freshest varietal notes, while reducing tannins and skin-related bitter notes to an absolute minimum. The resulting wine ferments in stainless steel tanks and remains on the fine lees for about 4 months before aging briefly in the bottle.

The colour of "Zìnzula" Rosato Salento IGT is gentle and delicate, akin to a compact face powder, with very subtle coppery reflections. The bouquet is rich, with refined floral notes of rosehip, accompanied by pleasant aromas of black cherry and a spiciness reminiscent of pink pepper and ginger, with a hint of turmeric. The taste is characterized by harmony and intense freshness in a slender body, supported by fine acidity and smoothed by a lively, savoury touch. The palate follows pleasantly, revealing crunchy fruit and concluding with a distinct mineral finish that teases the taste buds.

At a recommended serving temperature of approximately 10 to 12 degrees Celsius, the "Zìnzula" Rosato Salento IGT from Masseria Altemura perfectly complements the start of a meal with a variety of appetizers: from raw fish to lightly fried seafood, from sautéed mussels and clams to vegetable pastries, along with a selection of fresh and semi-aged cheeses. It also pairs well with main courses such as seafood or vegetable risotto, spaghetti with sea urchin, fish dishes in various sauces, as well as with fresh, spicy international dishes like Thai noodles and Phat Thai.
