Production area: Salento in the area of Brindisi and Lecce.
Soil type and training system: On middle mixture soils with Apulian freestanding system.
Plant density and yield: About 4000 plants per hectare. A yield of 60 to 70q per hectare.
Vinification: Obtained from a careful selection of Negroamaro grapes. Vinification in red with thermo-controlling fermentation process. Ageing for 6 months in barriques and then in bottle.
Sensory characteristics: Its smell is spiced and fruity, which are typical of this species of vine. In its taste we find some tannins, but they are smartly refined; finally, it is possible to perceive a pleasant bitter note.
Color: Garnet red with a great brightness.
Alcohol content: 14 % Vol.
Residual sugar: 9,8 g/l
Acidity: 6,3 g/l
Stopper: Natural cork
How to serve: It is suggested for roasts, mature cheese and game.
We recommend to open this wine at least 1 hour before serving.
Recommended serving temperature: 18 - 20°C.
