Grape: 100% Nero d'Avola

Prince of the oenological re-birth of Sicily, the Nero d'Avola is a very important native varietal. Initially found in Siracusa, it is now found in all of the winemaking areas of the island.

Production area: Sambuca di Sicila, in the province of Agrigento, where rich, mature and structured Nero d'Avola is obtained. It prefers clay-like terrain and is very sensitive to excessive dryness and too much exposure to sunlight. The type of farming is "Espalier", used with an average density of planting where there are 4500 plant per 2,5 Acres.

Vinification: Nero d'Avola. It is an average to early varietal maturing around the first week of September.

This wine is obtained from grapes that have reached perfect aromatic and polyphenolic maturation. Destemming and alcoholic fermentation with the skins occurs for 6-8 days at 22 to 24°C. Malolactic fermentation occurs with selected bacteria, then finally maturation occurs for 6 months in French barriques.

Sensory characteristics: Intense and covered, bouquet with notes of currant stick out, wild strawberries and pomegranate. Soft and velvety flavor. Distinct characteristics of fruitness come forth. 

Color: Deep ruby red with pleasant reflections of violet.

Alcohol content: 13,5 % Vol.

Residual sugar: 6 g/l

Restsüße: 6 g/l

Acidity: 5 g/l

Stopper: Pressed cork

How to serve: Pairs well with Risotto, first courses of baked pasta, red meats, lamb and savoury cheeses. For its pleasant structure and intense aromaticity, the Nero d'Avola pairs ideally with typical Sicilian dishes, Spaghetti alla Norma, with eggplant and smoked ricotta cheese.

Recommended serving temperature: Between 16 and 18°C.

Grape variety NERO D'AVOLA

NERO D'AVOLA is a high-quality indigenous grape variety of Sicilian origin, which is now widespread in southern Italy. Because of its excellent qualities, it is also called "Principe Siciliano" (Sicilian prince). The city of Avola lies between Syracuse and Noto. This variety is one of the traditional grape varieties of Sicily and is also known under the name "Calabrese", which may indicate the origin of the grape.

The NERO D'AVOLA is rarely offered as pure wine - but if, as in our case, it is usually deep dark and concentrated, without the necessary acidity is missing - but often in blending with Cabernet Sauvignon, Merlot and Syrah.

 

► SYRAH CONCHIGLIA (Trovati) D.O.C. 2016

Grape: 100% Syrah

This varietal is of middle eastern origins that is expressed at its best from the terrain of Sicily, thanks to the intense sunlight and uniqueness of the soil.

Production area: The grapes are cultivated at Sambuca di Sicilia, in the province of Agrigento, and also in Acate in the province of Ragusa. At Sambuca di Sicilia, it obtains a wine that is more mature and structured, at Acate, the wine is more delicate and fruity. The type of farming is "Espalier", used with an average density of planting where there are 4500 plants per 2,5 Acres.

Vinification: Syrah. It is an average to late varietal reaching maturity around the end of September.

Collected from the grapes of perfect phenolic and aromatic maturity. Destemming and alcoholic fermentation with the skins occurs at 26°C for 10 days. Malolactic maturation occurs with selected bacteria, then finally maturation for 10 months in French barriques.

Sensory characteristics: Warm and persuasive bouquet, with spicy notes of black pepper and thyme based on notes of wild fruit. The tannic flavour sensations in velvety and pleasant.

Color: Bright ruby red

Alcohol content: 13,5 % Vol.

Residual sugar: 6,6 g/l

Acidity: 5,8 g/l

Stopper: Pressed cork

How to serve: It goes well with savoury cold cuts, red meats cooked in irons, game, smoked cheeses and herbed cheese. It is also well paired with seafood dishes that are particularly savoury, such as swordfish with rosemary.

Recommended serving temperature: Between 16 and 18°C

Grape variety SYRAH

SYRAH is a low-yield but high-quality red grape originally from the Middle East, but famous for its widespread cultivation in France. The vine has become so important and is so sought after that it has moved up into the nobility of the wine world and is referred to as a noble vine.

 

► GRILLO CONCHIGLIA (Trovati) D.O.C. 2018

Grape: 100% Grillo

A varietal native to Sicily, the Grillo is the most famous white varietal on the island and was historically used for the production of Marsala.

Production area: Acate, in the province of Ragusa. This variety prefers typically sandy terrain that is sloped and gets a lot of sunlight. The type of farming is "Espalier", used with an average density of planting where there are 4500 plants per 2.5 Acres.

Vinification: Grillo. It is an average - to late varietal with maturity reached about the second week in September. The collection of the grapes, pressing, destemming is totally covered in the air (a method of vinification called "reduction"), the natural settling and fermentation take place at a controlled temperature of 18°C for 10 days. Maturation on the lees takes 5 months in steel tanks.

Sensory characteristics: The aroma is distinctly tropical with notes of mango and papaya, that blends with inklings of jasmine and white flowers. The flavor is balanced and harmonious with a delicate acidity.

Color: Deep straw yellow

Alcohol content: 13 % Vol.

Residual sugar: 4,5 g/l

Acidity: 5 g/l

Stopper: Pressed cork

How to serve: Goes well with seafood, first course pasta dishes with vegetables, white meats and baked fish. The richness and the aromatic fragrance of the Grillo makes it the ideal wine to pair with a dish such as a veal carpaccio with celery and strawberries.

Recommended serving temperature: Between 10 and 12°C

Grape variety GRILLO

The white grape variety GRILLO comes from Italy and is today mainly cultivated in Sicily. It comes from the region of Puglia and came to Sicily only after the phylloxera disaster of the 19th century, where it was first used in the famous dessert wine Marsala.

Grillo produces pale yellow wines that are rich in alcohol and extract. It also has a slight tannin content.

The indigenous grape variety Grillo is one of the most grown white grape varieties in Sicily. The grape harvest is subject to a very careful examination. Fermentation takes place under controlled temperature (18 ° C) for 10 days.
