Grapes: Corvina (55%), Molinara (10%) and Rondinella (35%).
Cultivation system: Traditional trellis cultivation, 3,000 grapevines per hectare.
Vintage: Last week of September. The grapes are hand-pricked.
Winemaking/fermentation: It takes place in stainless steel tanks at a low controlled temperature of 18°C. Gentle pressing and fermentation with shell contact for 2 days, then a week without peel at 18°C.
Storage: The wine remains in the bottle for at least one month before it enters the market.
Sensory characteristics: Due to its light and uncomplicated drinking pleasure, this Chiaretto presents itself as an ideal summer wine. The bouquet is harmonious and flowery, the taste full, slightly fruity, lively and dry.

Grape: 100% Aglianico
Origin: The grapes for DOLCE DORME Rosé grow in a hilly area (average 400m above sea level) near the town of Castrovillari in northern Calabria. Here the soils are particularly calcareous. In addition, the grapes benefit from the fact that there are great temperature differences between day and night.
Vinification: The vintage takes place by hand in the second decade of October. Then a classic rosé vinification with short coat contact in steel tanks at controlled temperature. The maturity is generally very short and takes place in steel tanks and in the bottle.
Sensory characteristics: Fresh and fruity scent with hints of melon and grapefruit. In the taste, this Aglianico Rosé is dry, harmonious, elegant and fresh. At the end, a delicate spicy note awaits.

Aglianico is a red grape that is grown mainly in the Basilicata and Campania. It was introduced more than 2500 years ago by the Greeks as vitis hellenica to Campania and spread up to Puglia and Basilicata.
This vine produces well-structures and full-bodied wines with intense tannins and a strong acid. The wines need, because of the high tannin content, some years of maturity to develop their high quality.
