Grapes: Corvina (55%), Molinara (10%) and Rondinella (35%).

Cultivation system: Traditional trellis cultivation, 3,000 grapevines per hectare.

Vintage: Last week of September. The grapes are hand-pricked.

Winemaking/fermentation: It takes place in stainless steel tanks at a low controlled temperature of 18°C. Gentle pressing and fermentation with shell contact for 2 days, then a week without peel at 18°C.

Storage: The wine remains in the bottle for at least one month before it enters the market.

Sensory characteristics: Due to its light and uncomplicated drinking pleasure, this Chiaretto presents itself as an ideal summer wine. The bouquet is harmonious and flowery, the taste full, slightly fruity, lively and dry.

Alcohol content: 12,0 % Vol.

Acid: 6,30 g/l

pH: 3,20

Dry extract: 19,50 g/l

Stopper: Synthetic cork

Serving suggestion: The Bardolino is a wine, the Italians like to call "Vino tuttopasto" (entire meal). This also applies to this Chiaretto. It can be served as an aperitif. It is suitable for all courses, goes well with starters, light dishes, grilled fish and pizza.

Recommended serving temperature: Between 13 and 14°C.

Quality Designation: Indicazione Geografica Protetta (I.G.P.)

Grape: 100% Aglianico

Origin: The grapes for DOLCE DORME Rosé grow in a hilly area (average 400m above sea level) near the town of Castrovillari in northern Calabria. Here the soils are particularly calcareous. In addition, the grapes benefit from the fact that there are great temperature differences between day and night.

Vinification: The vintage takes place by hand in the second decade of October. Then a classic rosé vinification with short coat contact in steel tanks at controlled temperature. The maturity is generally very short and takes place in steel tanks and in the bottle.

Sensory characteristics: Fresh and fruity scent with hints of melon and grapefruit. In the taste, this Aglianico Rosé is dry, harmonious, elegant and fresh. At the end, a delicate spicy note awaits.

Color: Pale pink with shades of orange.

Alcohol content: 12,5 Vol.-%.

Residual sugar: 5,10 g/l

Total acidity: 2,80 g/l

How to serve: After it comes out of the refrigerator on the table, this wine is very suitable as an accompaniment of light starters based on fish or seafood. If he simply stays on the table and heats up slightly, he fits perfectly to the entire menu.

Recommended serving temperature: Between 10 and 14°C.

Grape AGLIANICO

Aglianico is a red grape that is grown mainly in the Basilicata and Campania. It was introduced more than 2500 years ago by the Greeks as vitis hellenica to Campania and spread up to Puglia and Basilicata.

This vine produces well-structures and full-bodied wines with intense tannins and a strong acid. The wines need, because of the high tannin content, some years of maturity to develop their high quality.
