Red wine from Italy

Viticulture in the southern Italian region of Apulia has seen a huge leap in quality in recent years. The area owes its name to the Romans, who called it "Apluvia" - without rain. The Mediterranean climate is warm and dry, and the landscape is flat. Actually, the prerequisites for viticulture are not that good, but capable winemakers have managed to conjure up high-quality wines anyway.

The Cantina San Donaci is located in the place of the same name exactly in the middle of the heel of the Italian boot and currently unites around a thousand winegrowers who deliver their grapes to the winery, where they are then transformed into wonderful wine using the most modern methods. Only healthy and high-quality grapes can produce quality wines: on this basis, the Cantina San Donaci rewards the work of its members with a careful analysis of the incoming grapes and the distribution of the profit in relation to the quality of the grapes delivered.

The "Assina" Primitivo Tardivo Puglia IGP is made from what is probably the most famous Apulian grape variety, Primitivo. In 1999, DNA analyzes found that it is identical to the Zinfandel variety, with the Primitivo being the mother in this ratio. The geographical and climatic conditions in Apulia are the ideal terroir for the early maturing Primitivo grape. The growing area of the grapes for this red wine is in Salento on clayey mixed soils around the town of San Donaci.

The production process for the Assina Primitivo differs significantly from that of other Primitivo wines. The grapes for this wine are picked ten days after the actual grape harvest. This makes them more mature and their sugar content higher, which leads to a velvety and soft wine with a very distinctive aroma and a higher alcohol content. In the winery, the grapes are gently pressed immediately after harvest and traditional red vinification follows at a controlled temperature. The maturation then takes place in stainless steel.

The result is a very dense and multi-layered dark red Primitivo with complex aromas. You can smell fruit notes of cherry, raspberry and plum combined with a subtle spice note and a hint of liquorice. Dry, fruity, velvety, and warm on the palate with a complex structure. The finale is phenomenally long, and its tannins are perfectly integrated and balanced.

At a room temperature of around 18°C, the Assina Primitivo Tardivo from San Donaci tastes excellent with hearty dishes such as roasts, red meat, game, and mature cheeses. Ideal with Italian home cooking.

It has long been looking for the origin of the mainly in the USA famous grape ZINFANDEL. Finally, the mystery was solved in 1999. After DNA analyses turned out that the PRIMITIVO grape variety is identical with the Zinfandel. Wines from the grape PRIMITIVO can safely be called high-quality wines. They have a high sugar content, which consequently leads to a relatively high alcohol content. Nevertheless, they maintain a harmonious taste.
