Cantina San Donaci is based in the Apulian town of San Donaci. Here in the centre of the city triangle of Taranto, Brindisi, and Lecce, it was founded in 1933 by twelve winegrowers. Over time, more and more farmers joined the idea of joining forces, so that today about three hundred members have their grapes refined into wine by the Cantina San Donaci. Today Cantina San Donaci uses highly innovative technologies to further improve the excellent organoleptic and qualitative characteristics of the wines, thus enhancing the typical flavours and aromas. But what most distinguishes the production of wines from Salento near San Donaci is the irreplaceable aging in oak barrels, which more than anything else, refines their flavour and enhances the already great quality.
The vines for the "Anticaia" Primitivo del Salento IGP are grown in Salento in the provinces of Brindisi and Lecce on soils that have a calcareous-clay composition. The 20–30-year-old plants are grown using the Puglia cordon seedling training system with 4,500 vines per hectare and a final yield of 110 quintals per hectare. This method allows better exposure of the grapes for growth and promotes air circulation, which is important for preventing disease and improving grape quality. Primitivo is a red grape variety native primarily to Puglia, Italy. The grapes are dark and juicy, resulting in powerful red wines with varied aromas of dark fruits, spices and occasionally a slight smokiness. Primitivo wines from Puglia are typically high in alcohol and tannins, giving them a velvety texture.
Depending on their level of ripeness, the Primitivo grapes are always harvested in the early hours of the morning from September onwards, followed by immediate red wine vinification. The maceration and fermentation take place in thermo-climate steel tanks. After completing the winemaking process, the wine rests in steel tanks for six months before bottling and then refines in the bottle for another six months.
The "Anticaia" Primitivo del Salento IGP from San Donaci has a deep ruby red colour with violet nuances. Fragrant on the nose with an intense, complex, and persistent aroma of red fruits and subtle herbal nuances. The taste of this fantastically fruity red wine is dry, warm, soft, tannic, persistent and has a good body and structure. At the end there is still a long finale.
At an optimal drinking temperature of around 16 to 18°C, this Primitivo goes perfectly with hearty pasta dishes, roasted meat, roasts, and all well-ripened cheeses. Great with a fresh pizza from the oven.
