Apulia is one of the most important wine regions in Italy and is located in the southeast of the country. Wine production in Apulia has a long tradition and includes more than 20 autochthonous grape varieties. The main grape varieties in Puglia are Primitivo, Negroamaro and Aglianico. The vineyards stretch along the coast and in the hills of the hinterland. The soils are mostly calcareous and sandy, which gives the wines their characteristic minerality and freshness. The winegrowers in Apulia rely on sustainable cultivation methods and modern technologies to produce wines of the highest quality. Renowned for their intensity, complexity and richness, wines from Apulia are appreciated worldwide.

The Cantina San Donaci is based in the Apulian town of the same name, San Donaci. Here in the centre of the city triangle of Taranto, Brindisi, and Lecce, it was founded in 1933 by twelve winegrowers. Over time, more and more farmers joined the idea of joining forces, so that today about three hundred members have their grapes refined into wine by the Cantina San Donaci. Today Cantina San Donaci uses highly innovative technologies to further improve the excellent organoleptic and qualitative characteristics of the wines, thus enhancing the typical flavours and aromas.

The "Assina" Bianco Puglia IGP from the Cantina San Donaci is a cuvée white wine made from the grape varieties Fiano and Malvasia Bianca. The autochthonous Fiano is one of the oldest grape varieties in Italy and has been native to Apulia for a long time. Their wines are known for their powerful aromas and good storage potential. The Malvasia Bianca is also a white wine grape variety, which is not cultivated that often in Apulia, but is a perfect partner for the Fiano, above all due to its high acidity.

After carefully harvesting the individual grape varieties, they are quickly transported to the wine cellar to avoid unwanted oxidation. Here the bunches of grapes are pre-sorted, de-stemmed and gently pressed. Now a traditional white winemaking can begin. The fermentation of the must takes place in stainless steel tanks. After completion of the fermentation, the wine is separated from the yeast and trub and stored in stainless steel tanks in order to give the wine the chance to gain complexity and richness of nuances through the malolactic fermentation that takes place here.

The straw yellow colour with greenish reflections already indicates the freshness of the “Assina” Bianco Puglia IGP. Its fruity bouquet is composed of notes of citrus and exotic fruits. Dry on the palate, this white wine has an excellent balance between fruit and acidity. It is tasty with a clean finish and is long lasting at the end.

At a well-chilled drinking temperature of around 8 to 10°C, the "Assina" Bianco Puglia IGP from San Donaci goes very well with raw seafood, sushi, and other fish dishes. Also fantastic with light starters and as an aperitif.

Grape variety

FIANO

The ancient FIANO is an autochthonous white wine grape variety from Campania, which is now also cultivated in other areas of southern Italy. Fiano grapes have a thick skin and are therefore relatively resistant to pest infestation. The grapes are yellow green in colour and medium-sized. The grape variety is known for its powerful aromas of peach, tangerine, honey, and floral notes. The wines made from Fiano grapes tend to be full-bodied and have a good acid structure, which gives them good aging potential. They are often aged in steel or wooden barrels and can become even more complex and rich in nuances after a long period of aging in the cellar. The Fiano grapes thrive best in a Mediterranean climate on calcareous soils. The variety has gained international importance in recent years and is now also cultivated outside of Italy.

MALVASIA BIANCA

The MALVASIA BIANCA is a white wine grape variety that is cultivated in different regions of Italy, but also in Spain, Portugal, and other countries. It belongs to the large Malvasia family and is known for its fruity aromas and versatility. The grapes are relatively large and yellowish in colour. Malvasia Bianca wines are mostly dry or semi-dry and have high acidity, which gives them good aging potential. They are often fruity, with notes of citrus, green apple, and exotic fruits. Often aged in steel or wooden barrels, Malvasia Bianca can also be used in the production of sweet or sparkling wines.
