The Aceto Balsamico di Modena
Aceto Balsamico di Modena is far more than a simple vinegar – it embodies centuries of Italian craftsmanship and culinary refinement. Even the Romans used reduced grape must as a sweetener and remedy. The term balsamico derives from the Latin balsamum, meaning "fragrant" or "healing" – a nod to its origins as a medicinal elixir. Its first recorded mention dates back to 1046, when a fine vinegar from Modena was presented to Emperor Henry III, symbolising exceptional esteem. Over time, Balsamico became a prestigious product, particularly nurtured by the Este noble family. Secret family recipes were passed down through generations in so-called “vinegar batteries” – rows of wooden barrels made from various types of wood. Today, the vinegar is protected under the EU's PGI (Protected Geographical Indication) status and may only be produced and matured in the provinces of Modena and Reggio Emilia. It consists of concentrated grape must – typically from Lambrusco or Trebbiano grapes – at least 10% wine vinegar, and a portion of vinegar aged over ten years. The blend is matured for a minimum of 60 days in barrels made of oak, chestnut, mulberry or juniper. After three years, it may be called invecchiato (aged), and after five years, riserva. Up to 2% caramel is permitted to adjust colour, but other additives are strictly forbidden. Before bottling – usually in refined glass or ceramic containers – the vinegar undergoes a sensory evaluation by experts to ensure quality. Premium varieties are used sparingly, drop by drop, over strawberries, Parmesan, or even as an aperitif. A useful tip: Always check for the PGI label when buying. For salad dressings, a simpler Balsamico will do – the Tradizionale is almost too precious for that purpose.
