Nestled amidst the picturesque landscapes of the quaint town of Mazara del Vallo, placed between the historic cities of Marsala and Agrigento in the enchanting West Sicily, stands the Assuli Winery like a gem of the countryside. Its roots delve deep into history, reaching back to a magnificent timber-framed complex from the 18th century, which has blossomed over time into a captivating operational site. Embraced by the gentle slopes of hills, this place seamlessly combines modern functionality with a profound connection to the surrounding territory. Founded in 1948 by Giacomo Caruso, the tradition and passion of this winemaking craftsmanship are now carried forward by his son Roberto. With tireless energy and determination, this family-run business strives to solidify the cornerstone of the origin area's identity. Their aim is to promote the production of Sicilian grapevines, thereby preserving the rich aromatic heritage that makes the island truly unique. In every sip of their wines, the history and beauty of this region are reflected, while simultaneously paying homage to the unparalleled diversity and passion of Sicilian winemaking.

The white grape variety Zibibbo is only called that in Sicily. In the rest of the world, it is mainly known under the name Muscat d'Alexandrie. However, there are countless other names for this grape variety. It is believed that its Sicilian name is borrowed from the African Cape Zibibb, because the Phoenicians are said to have brought this variety from Egypt to southern Italy. It is predestined for cultivation in southern Sicily, as it is resistant to heat and drought and has no problem with strong sea winds.

The climate in Mazara del Vallo in western Sicily, with its mild winters and breezy summers, is ideal for viticulture. The grapes grow here on medium-structured soil with a pebbly skeleton and good mineral content at an average altitude of 200 to 250m above sea level. The Zibibbo is grown in the spur cordon with medium to high plant density.

The manual harvest takes place in the second half of September, with variable procedures depending on the vintage and the degree of ripeness of the grapes. Immediately after arriving in the wine cellar, the fruits are gently pressed using a membrane press. After the must has undergone static clarification, fermentation begins at a controlled temperature of 16-17ºC in large stainless-steel vats. The refinement of the "Dardinello" Zibibbo Sicilia DOC from Assuli then takes place on the yeasts in stainless steel and lasts around four to five months. This wonderful white wine then gets its final touch in its bottle, where it is left alone for at least two to three months.

The Dardinello Zibibbo presents itself in the glass or in the carafe with a straw yellow colour with greenish reflections. Aromas of peach and citrus fruits dominate the nose. On the palate, this varietal Zibibbo is dry, fresh, and soft with a pleasant balance between acidity and minerality.

At an ideal serving temperature of about 8 to 10 degrees Celsius, this unique Sicilian white wine unfurls its full splendour as a refreshing aperitif. Its fruity and floral aromas make it an extremely pleasant companion, priming the palate for the forthcoming gustatory experience. Subsequently, it pairs wonderfully with light Mediterranean starters, enhancing the flavour journey in remarkable ways. The warm, sun-drenched hills of the island, combined with the Mediterranean climate and volcanic soils, provided optimal circumstances. Sicilian winemakers appreciated the versatility and aromatic richness of the grape, beginning to cultivate it in their vineyards. The leaves of the Zibibbo plant are large, heart-shaped, and deep green, exhibiting various shades depending on the growth stage. The large clusters are loosely packed and have a slightly conical shape, enveloped by a golden to amber-coloured skin. Their distinctive oval shape is unmistakable. The berries of the Zibibbo grape are characterized by their size and thick, fleshy skin. They are known for their high sugar content and intense aromas, ranging from floral to spicy. The Zibibbo plant has moderate vigour and often develops long shoots. Typically, the Zibibbo plant is grown as bush vines or trained on trellises to ensure optimal exposure of the grapes and good air circulation. It is adaptable to various soil types but particularly successful in volcanic soils. Harvest usually takes place late in autumn to achieve maximum ripeness and aroma concentration, allowing the berries time to develop their natural sugar content and unfold complex flavours. In Sicily, the Zibibbo grape finds diverse usage. It is a key component in many sweet wines such as the famous Marsala, a fortified wine from the region around Marsala. Zibibbo is also used in the production of dessert wines, liqueurs, and aperitifs.
