Sparkling wine from Italy

Di Carlo is a brand of the renowned Cantina Montelliana e dei Colli Asolani from the province of Treviso in Veneto. The winery has a long history and has been producing high quality wines for many decades. The Cantina Montelliana vineyards stretch across the rolling hills of the Asolo region, known for its ideal climatic conditions for viticulture. The vineyards benefit from a combination of mild temperatures, good sun exposure and the influence of the nearby Dolomites, which provide excellent drainage and mineral-rich soils. The winery attaches great importance to traditional winemaking techniques and works closely with local winemakers to select the finest grapes.

The Prosecco Rosato is made from 90% Glera and 10% Pinot Nero. On May 20, 2020, the wine committee of the Ministry of Agriculture in Rome approved the introduction of the typology DOC Rosé. The Prosecco DOC Rosé is made from the blend of the main variety Glera with at least 10 to a maximum of 15 percent Pinot Nero, the only red variety permitted in the regulations. The sparkling must last at least two months, twice as long as for white Prosecco DOC. The wines are classified as "brut nature", "brut" and "extra dry" and appear as millesimato (dated by vintage).

Sparkling wine fermentation according to the Charmat process is a method for producing sparkling wine. Unlike the traditional Champenoise method, where the second fermentation takes place in the bottle, the Charmat method creates foam in pressure tanks. The process begins with the production of a Glera and Pinot Nero base wine through the alcoholic fermentation of the grape must. The must is first placed in stainless steel tanks where it ferments under controlled conditions. Once the base wine is made, it is transferred to a pressure tank. A mixture of yeast and sugar, also known as "tirage", is added to the base wine in the pressure tank. The addition of sugar allows re-fermentation, producing carbon dioxide that remains dissolved in the wine. The pressure tank is then sealed to ensure that the resulting carbon dioxide remains trapped in the wine, creating a natural carbonation. The yeast starts converting the added sugars into alcohol and carbon dioxide, causing a second fermentation to take place in the pressure tank. This process can take several weeks depending on the quality and style of sparkling wine desired. After the second fermentation is complete, the sparkling wine is filtered to separate the lees. This is usually done under pressure to minimize loss of carbon dioxide. The sparkling wine is then filled into bottles or other containers and sealed.

The "Di Carlo" Prosecco Rosato DOC Brut presents itself to the eye with a brilliant cherry pink and has a pleasant perlage. It is well structured, delicate on the nose with a floral scent and notes of red fruits. On the palate, this Prosecco Rosé is fresh and elegant, with a pleasant nuance of fruity aromas.

At an optimal drinking temperature of around 8 to 10°C, this sparkling wine is a wonderful aperitif and an excellent accompaniment to light starters, fish dishes and young cheeses.

Grape variety

GLERA

The Glera is a white grape variety grown mainly in north-eastern Italy, in a small hilly region of the province of Treviso, Veneto. The climate in these areas offers optimal conditions for cultivation, with warm summers and cool nights that contribute to the development of complex aromas. The Glera vine is characterized by its high productivity and resistance to diseases. The yellow-green grapes of this variety are small to medium-sized and ripen early. Its low acidity produces a wine with a fruity aroma and a pleasant freshness. The typical aromas include green apples, pears, citrus fruits, and flowers. Wines from the Glera were already known in ancient times as vinum Puclnum and were extremely popular.

PINOT NERO

Pinot Nero, also known as Pinot Noir, is a noble red wine variety grown in Italy. With its origins in Burgundy, it has adapted perfectly to different terroirs in Italy. The vines produce grapes with a thin skin that produce a light, elegant and complex wine. Pinot Nero is characterized by its ruby red colour, fruity aromas of red berries, cherries and blackberries and subtle notes of spices, undergrowth and mushrooms. In the mouth it presents itself with silky tannins, a balanced acidity and a long-lasting finish. As a fun fact, this grape variety is an important blending partner for champagne production.
