Here, an insular-Mediterranean climate, characterized by mild winters and refreshing summers, shapes the terroir, proving almost ideal for viticulture. On clay soils, marked by a rich limestone content and a balanced blend of organic elements and nitrogen, vines trained with the spur-pruned cordon system thrive, with a medium to high planting density ensuring optimal conditions.

The grape harvest commences in mid-September, with a subtle variation in timing for grape picking depending on the altitude of the vineyards. Upon arrival at the winery, the grapes are destemmed and gently pressed to preserve their precious essence. Subsequently, a gentle maceration lasting 10 to 15 days ensues, accompanied by a careful fermentation at a temperature of 26 degrees Celsius, shaping the wine's unique spectrum of aromas. Following the completion of the malolactic fermentation process, the wine matures for 3 to 4 months in stainless steel containers, where it unfolds its characteristic richness and balance.
