The name "Settefiglie" for this wine refers to the road through which grapes are transported from the vineyards to the winery. Nebbiolo, as widely recognized, is an exceptionally noble grape variety. This is attributed not only to the series of sublime wines that emerge from its grapes but also to its versatility, allowing for a "normal" vinification and tasting process. Hence, wines of remarkable popularity arise even when they are not subjected to the steps in wooden barrels and long aging. The Settefiglie Nebbiolo Langhe DOC is exclusively made from Nebbiolo grapes cultivated in the province of Cuneo, which encompasses its 94 municipalities, also known as the "Langhe."

In the picturesque village of Vinchio, halfway between the famous cities of Asti and Alba, lies the renowned winemaking cooperative Vinchio Vaglio. Here, the cooperative has amassed rich experience in processing regional wines. The precious Nebbiolo grapes are tenderly nurtured by talented local winemakers and then meticulously transformed into the fabulous Settefiglie Nebbiolo Langhe DOC in the cooperative's cellar.

The Nebbiolo vine, native to the Piedmont region in northwest Italy, thrives particularly well in the Langhe, a hilly area south of the Tanaro River. Gentle hills, blanketed with vineyards, frame charming villages and historic towns such as Barolo, La Morra, and Serralunga d'Alba. Cultivation demands patience and care, as the vines are sensitive to climate changes and require a lengthy growing season. The diverse altitudes and orientations of the vineyards contribute to the variety found in Nebbiolo wines, which are refined through the combination of traditional expertise and modern techniques employed by Langhe's winemakers. The Langhe region is renowned for iconic wines like Barolo and Barbaresco, which embody the essence of the Nebbiolo grape.

The grape harvest typically takes place in the first decade of October, when the autumn colours paint the landscape. The meticulous picking is always done by hand, starting early in the morning to ensure that the fresh grapes are brought to the cellar on the same day, where they await their transformation. After destemming and pressing, the juice flows into horizontal fermentation tanks, initiating its metamorphosis. Alcoholic fermentation with maceration lasts for six days, a period of intense activity during which regular rotations are performed to keep the juice constantly in contact with the pressed residues. The fermentation temperature is carefully maintained at around 24 degrees Celsius to ensure optimal conditions. Once alcoholic fermentation is complete, malolactic fermentation begins immediately, another step towards perfecting the wine. Following this stage, the wine rests for about six months in concrete tanks, allowing it to fully express its potential and develop its characteristic aromas. Finally, after this period of rest and maturation, the wine is meticulously bottled. However, before it hits the market, it remains in the bottle for an additional three months to undergo final aging, completing its complexity and finesse.
