At the bottom, narrower part of the Adige valley and on the hills surrounding the old village of Salorno, winegrowing has become an art due to centuries of experience and tireless work by its wine growers. This art is expressed in the quality of Tolloy.

The "land lying amongst mountains" as Alto Adige (South Tyrol) used to be called in the old days, is one of the most colourful landscapes in Europe. The gentle hills surrounding the village of Salorno ensure lush and flourishing vineyards thanks to the presence of the Alps which shelter them from the cold North winds. This terroir is particularly well suited due to its dry climate and long periods of mild temperatures which guarantee a perfect ripening of the grapes. The large influx of travellers saw this area develop several accommodation facilities which lead to opening inns and holding important meetings and decisions made by innkeepers. The wine Tolloy has been named after one of the most renowned of these innkeepers from the early 18th century, Johann Tolloy. Tolloy is a prestige line of wines from Alto Adige produced through a collaboration between Mezzacorona and the Salorno wine-cellar.

The Pinot Grigio grape variety has been grown in the Adige Valley for a long time, where it is also known under the name Ruländer. The shape of the grapes and their gray-reddish colour reveal the close relationship with the Pinot Nero, from which it apparently originates. It is grown both in the valley and on low hills. The Pinot Grigio is also known under the name Grauburgunder. It provides low-acid, but full-bodied and extract-rich grapes that often appear gray.

The grapes for the Tolloy Pinot Grigio Alto Adige DOC are harvested between the beginning of September and mid-October. The exact time of harvest cannot be decided in advance due to the different microclimates and height profiles of the vineyards and is determined individually by the winemaker while observing the degree of ripeness of the fruit. After the harvest, the grapes are immediately transported to the wine cellar, destemmed, and crushed. Then the traditional white winemaking begins with brief maceration on the skin at a controlled temperature of around 18 to 20°C.

The result is a Pinot Grigio, which is characterized by its balance, finesse, and elegance. Its bouquet is delicate and fruity with subtle hints of vanilla. On the palate, this white wine is dry, elegant, full, and extremely soft. The mild acidity is hardly noticeable.

At an ideal serving temperature of around 10 to 12 degrees Celsius, the Pinot Grigio from the Adige Valley reveals its qualities most impressively. Thanks to its lively acidity structure, this wine becomes an excellent companion to seafood such as oysters, mussels, prawns, and various fish varieties. The refreshing character of the wine subtly enhances the delicate flavours of the sea delicacies. In addition to this exquisite affinity for seafood, Pinot Grigio proves to be a suitable partner for light salads, especially those with a delicate dressing. The fruity nuances of the wine harmonize exceptionally well with green leafy salads, sun-ripened tomatoes, and mild cheeses. Pan-fried or grilled chicken experiences a flavour enhancement through the freshness of Pinot Grigio. The wine's light structure, in turn, forms a successful union with more delicate meats. Vegetarian dishes with fresh vegetables, pasta, and lighter sauces also find a convincing companion in Pinot Grigio. Wines from South Tyrol come into their own, particularly with dishes where the natural sweetness of vegetables is to be emphasized. Antipasti, bruschetta, or other airy appetizers unfold their flavour diversity in harmonious interplay with Pinot Grigio. The versatility of this wine is also evident in its combination with white-fleshed fish. Whether pan-fried or grilled, subtly seasoned with herbs, the fruity notes of Pinot Grigio elegantly meld with the delicate aromas of the fish. The wine's fresh acidity and adaptability make it an esteemed companion for Asian dishes, especially those with more delicate meats, vegetables, and mild spices. Lastly, Pinot Grigio recommends itself as an excellent aperitif wine. Its balanced freshness and appealing versatility make it a truly enjoyable introduction to culinary experiences.

Although the exact origin of this grape variety remains shrouded in mystery, it is widely believed to have emerged from a mutation of the Pinot Noir grape. Over the centuries, the Pinot Grigio grape has spread to various wine regions across Europe, establishing roots particularly in Northern Italy, Germany, and the picturesque Alsace region in France. Since the late 20th century, this refined grape variety has also made its mark in other parts of Italy, including the enchanting South Tyrol. Pinot Grigio stands out for its remarkable ability to adapt to different terroirs, resulting in a fascinating diversity of styles and flavour profiles in various wine regions. The leaves of the Pinot Grigio plant are medium to large, with a gently rounded or slightly oval shape. The vine itself is typically not overly vigorous, and the grapes tend to hang loosely on the vine. The berries of the Pinot Grigio plant are usually small to medium-sized, compact, and have a cylindrical shape. The colour ranges from a greyish to reddish hue, lending the variety its distinctive name "Grigio" (grey in Italian). However, there are also variants with a hint of pink to violet.
