Cold-pressed extra virgin olive oil of the highest quality, directly from Tondina olives harvested in Italy and obtained exclusively using mechanical processes.

Clear and golden yellow in colour with green reflections, the nose reaches a scent with fresh aromas of herbs and unripe vegetables and a nice medium fruitiness. Sensations arise on the palate that oscillate between sweet, bitter, and medium spiciness. The perception is embellished by almond scents and an intense, immature aftertaste. Overall, this exceptional olive oil has a good structure with a rich aromatic blend and a long persistence.

The Tondina variety, also called “Spezzanota” or “Roggianella”, is a typical variety from the southern Italian province of Cosenza in Calabria. It is a cultivated plant that does not place any special demands on climate or soil due to its extreme adaptability to a wide variety of environments. However, it is particularly widespread in the hinterland of the city of Cosenza. The Tondina olive is a rustic variety that is particularly resistant to infestation by common olive tree parasites such as fly, peacock eye and scab. It is a self-pollinating variety with a medium to late maturity. Olives for table consumption are harvested in November, but olive oil is not harvested until the end of December. The stone fruits of the Tondina variety are medium-sized, weighing around 2 to 2.5 g, and the oil yield is rather low at around 15%, depending on the time of harvest. In the past it was abandoned in favour of higher yielding varieties from other regions. However, today it is a product used to produce an excellent olive oil.
