GRILLO SICILIA DOC BIO 2023

  • Grape: 100% Grillo.
  • Contents: 0.75 litres
  • Viticulture: The climate in Mazara del Vallo is ideal for viticulture and offers mild winters and breezy summers. The grapes grow on a medium-structured soil with a pebble skeleton and good mineral content at an average height of 200 to 250 MAMSL. The wine is grown in the spur cordon with medium to high plant density.
  • Winemaking: The harvest takes place in the first two weeks of September. Very gentle pressing with a membrane press, followed by static clarification of the musts and temperature-controlled fermentation (16/17°C) in stainless steel vats. The aging begins on the fine lees "sur lies" in stainless steel tanks for four to five months and undergoes a final refinement for at least two to three months in its bottle.
  • Sensory characteristics: Intense and elegant aromas on the nose, reminiscent of citrus fruits and orange blossom. Dry, mineral, enveloping and fruity on the palate. Long Finale.
  • Colour: Luminous golden yellow.
  • Alcohol content: 12.5 % Vol.

  • Viticulture: The climate in Mazara del Vallo is ideal for viticulture and offers mild winters and breezy summers. The grapes grow on a medium-structured soil with a pebble skeleton and good mineral content at an average height of 100 to 150 MAMSL. The wine is grown in the spur cordon with medium to high plant density.
  • Winemaking: The harvest takes place from mid to late September, depending on the vintage and ripeness of the grapes. This is followed by a gentle separation of the fruit from the stems and maceration for 10 to 15 days. Extraction by traditional pumping. The fermentation temperature is 26°C. After malolactic fermentation, the wine is matured in steel tanks for a period of 3 to 4 months and then refined in the bottle for a further 3 to 4 months.
  • Sensory characteristics: Intense aromas of ripe red fruits on the nose. Dry on the palate with a good balance and soft tannins.
  • Colour: Ruby red with violet reflections.

  • Contents: 0.75 litres
  • Viticulture: The climate in Mazara del Vallo is ideal for viticulture and offers mild winters and breezy summers. The grapes grow on clay soils with good limestone and a balanced content of organic matter and nitrogen at an average height of 100 to 150 MAMSL. The wine is grown in the spur cordon with a medium to high density of plants.
  • Winemaking: The harvest takes place from the beginning to mid-September, depending on the vintage and ripeness of the grapes. The fruit is then gently separated from the stems and macerated for 10 to 15 days, the time depending on the vintage. Extraction by traditional pumping. The fermentation temperature is 26°C. After malolactic fermentation, the wine is matured in steel tanks for a period of 3 to 4 months and then refined in the bottle for a further 3 to 4 months.
  • Sensory characteristics: Intense aromas of spices, liquorice, pepper and Mediterranean bushes on the nose. Dry on the palate and a certain freshness, which is accompanied by a persistent sharpness. Long finish.
  • Colour: Intense ruby red with purple reflections.

  • How to serve: Goes well with red meat from the grill, game board, sausage products and spicy cheese. Try this wine with fresh pasta with minced meat sauce.
