► "Sovrana" BARBERA D'ALBA DOC 2020

  • Grape: 100% Barbera from the Alba zone.
  • Contents: 0.75 liters
  • Manufacturing: The grapes are hand-picked in the first half of October. After that, they are carefully separated from the stems and gently squeezed. Fermentation takes place in stainless steel tanks for about 10 to 12 days. After malolactic fermentation, 30 to 40% of the total mass ends up in French oak barrels, where this part is refined. The other part of the mass completes its aging in large Slavonian oak barrels. The two parts are then put together and given a further rest period in stainless steel tanks. This Barbera then gets the final refinement in its bottle.
  • Sensory characteristics: It offers an intense and persistent olfactory expression with hints of red and ripe fruits and cherries in alcohol. Pleasantly spicy notes with delicate wood and floral notes. On the palate, the freshness harmonizes an obvious alcohol content, which is, however, absolutely pleasant. Nice acidity and very aromatic. Balanced and of medium length with a subtle hint of wood. It manifests an intensity and persistence that is typical of great wines.

  • Grape: 100% Grillo. A varietal native to Sicily, the Grillo is the most famous white varietal on the island and was historically used for the production of Marsala.
  • Contents: 0.75 liters
  • Production area: Acate, in the province of Ragusa. This variety prefers typically sandy terrain that is sloped and gets a lot of sunlight. The type of farming is "Espalier", used with an average density of planting where there are 4500 plants per 2.5 Acres.
  • Vinification: Grillo. It is an average - to late varietal with maturity reached about the second week in September. The collection of the grapes, pressing, destemming is totally covered in the air (a method of vinification called "reduction"), the natural settling and fermentation take place at a controlled temperature of 18°C for 10 days. Maturation on the lees takes 5 months in steel tanks.
  • Sensory characteristics: The aroma is distinctly tropical with notes of mango and papaya, that blends with inklings of jasmine and white flowers. The flavor is balanced and harmonious with a delicate acidity.
  • Colour: Deep straw yellow

  • Vinification: The Assina Primitivo differs by a special production method of "normal" Primitivo wines. The grapes for this wine are harvested 10 days after the actual vintage. As a result, the grapes are riper and the existing sugar content is higher and leads to a very velvety and soft Primitivo with a very unique Aromatik. In the winery, the grapes are gently pressed immediately after harvest, followed by a traditional red wine preparation at controlled temperature. Thereafter, the Assina Primitivo stores in stainless steel containers until bottling.
  • Sensory characteristics: Its bouquet is intense and complex. You can smell fruit notes of cherry, raspberries and plums combined with a perceptible spice note and a hint of liquorice.
