The renowned winery Rocca Bernarda is one of the oldest wineries in Friuli Venezia Giulia and was founded in 1567 in Corno di Rosazzo near Udine by Bernardo di Valvason Maniago. In the present it is operated by the Order of the Knights of Malta. The cultivated vineyards cover around fifty hectares, the majority of which are newly planted, with a planting density of around 5,500 vines, and using material derived from clone selection and mass selection carried out on the farm. In this way, the new vines are already acclimatized to the terroir and the quality is optimized. All vineyards benefit from ideal climatic conditions, including warm summers, cool breezes from the Alps and optimal sunshine. Rocca Bernarda attaches great importance to traditional winemaking techniques and an environmentally friendly approach. Strict quality controls are carried out throughout the winemaking process to ensure wines of exceptional quality.

The Sauvignon or Sauvignon Blanc is a white grape variety that is appreciated worldwide for its characteristic aromas and freshness. It originally comes from the Bordeaux region and the Loire Valley in France but is now widespread in many wine-growing regions around the world, including Italy. If this grape variety is cultivated in Friuli, the wine develops exceptionally aromatic properties. The grapes of the Sauvignon Blanc vine are small to medium-sized and have a thin, green-yellow skin. The grape variety prefers cool climates and thrives best in regions with moderate temperatures, such as those prevalent in most of Friuli Venezia Giulia. Wines made from this grape variety, when produced in Friuli, stand out for their intense aromas, freshness, and fruitiness.

The grapes for the Sauvignon Friuli DOC of Rocca Bernarda are grown in a hilly area called Colli Orientali del Friuli, at an average altitude of 120 m asl. with the Guyot vine training system. The manual harvest is carried out at different times to allow the harvest of both early and late ripening grapes. All subsequent stages of winemaking, such as crushing and pressing of the grapes, fermentation of the must at controlled temperature and bottling, are carried out with great care and under oxygen control to preserve as many aromas as possible. Systems are used here that allow working in a protected atmosphere. The aging process of this white wine lasts about five months and is carried out on fine lees in stainless steel tanks. After bottling, the Rocca Bernarda Sauvignon must remain in its bottle for at least two months before it can be marketed.

The Sauvignon Friuli Colli Orientali DOC finds its specialty in the balance between aroma and taste. It is a complex, structured, and multi-faceted wine. With its straw yellow streaked with greenish reflections, this northern Italian produces scents reminiscent of grapefruit, sage, mint, and cedar. The taste is dry, strong, warm, and soft, but at the same time fresh. Its full-bodied, beautiful persistence ends with a clean finish.

At an optimal drinking temperature of around 10 to 12°C, this Sauvignon Friuli can be an excellent aperitif wine. When it's in season, this white wine is an almost perfect accompaniment to asparagus dishes with melted butter. Generally nice with light appetizers, vegetable soups, fish and light dishes based on risotto.
